How did they survive? Who stayed healthy enough to survive? What types of food did they eat? How does this translate to what we eat today? If we look at all the oldest civilizations and analyze how they eat, it gives us clues as to how we might benefit from their knowledge. Basically, they may not eat the same types of food, but they eat the same proportions of food. What do I mean by this? Let's take a closer look...............

First let me state that one needs to make every effort to have clean foods in their diet. By that I mean home grown, organic, pasture fed, and whole(non-processed). There are so many chemicals in food from the sprays on the plants, pesticides and non-organic fertilizers, preservatives, stabilizers, artificial colors & flavors that I am constantly amazed that they are legal let alone palatable.

Now to the chart to the right. Imagine if you will, that all the food you have eaten over the course of one day is represented in a large glass container. As you can see I have separated the categories of foods into three. Protein, Grain and Cooked Vegetables.

The bottom part of the bowl is the largest with 60% of all food intake being quick cooked vegetables. Why cooked and not raw? If we compare a large bowl of salad to a large bowel of cooked vegetables we see some obvious differences. First, if we lightly cooked the bowl of salad we would need at least three salads to equal the volumne of one bowl of cooked vegetables. Another point is that the cooked vegetables are partially digested and do not need to be chewed one hundred times like a salad should be. Lastly, any opportunistic organisms on the food will be negated by the quick cook method.

One half of the cooked veggies should be dark green leafy vegetables such as Swiss Chard, Kale, Collards, Beet Tops, Mustard Greens and the like. As long as the vegetable has a large dark leaf, it can be included in this section. These contain all the essential minerals and chlorophyll that you will ever need. These taste good and now you don't have to buy expensive supplements. As an aside you may be surprised that plant and human blood is very similar in that plants use manganese in the center of their hemoglobin type molecule(chlorophyll) and humans use iron in the center of theirs. So by eating chlorophyll and iron we essentially make the hemoglobin molecule. That is the molecule in our blood stream that carries oxygen.

The other half of the cooked vegetables can be any other kinds that you enjoy such as asparagas, peas, carrots, mushrooms, turnips, etc...

The next category in our glass bowl is Grains. Included in this category are potatoes, corn & beans as they essentially act like a grain. They are not included in the vegetable category for this excercise. Only 20% of

PROTEIN

(CHICKEN, BEEF, FISH, EGGS, NUTS, SOY, HARD CHEESE, ETC) NO MILK

20%

GRAIN

(OATS, WHEAT, BARLEY, RICE, COUS COUS,

POTATOES, CORN, BEANS)

20%

COOKED VEGETABLES

1/2 = DARK GREEN LEAFY VEGETABLES

( MUSTARD GREEN, COLLARDS , KALE,

SWISS CHARD, BEET TOPS, SPINACH,)

1/2 = ALL OTHER VEGETABLES

60%

of the diet should be grains to keep lean and mean.

The next category is Protein and it should also be only 20% of the total diet by volumne. You should mix the different types of protein as they all have benefits that the others do not have. I suggest that we stay away from milk as it only makes us lose Calcium, create phlegm, and needlessly play with our blood sugar regulation.

Lastly, drink only water, herbal teas, pure fruit and vegetable juices. Listen to your body and when you are thirsty drink and when you are not, do not. Eat as much fruit as you wish as it is not counted in to the nutrition bowel..
